Ingredients
For the Salad:
- 2C. Garbanzo Beans, rinsed and drained
- 2C. Black Beans, rinsed and drained
- 2C. Yellow Sweet Corn, rinsed and drained
- 1Ea. English Cucumber, seeded and diced
- 2C. Grape Tomatoes, sliced into quarters
- .5Ea. Yellow Sweet Onion, finely diced
- 1t. Cumin, ground
- .5t. Chipotle Chile Powder
- TT. Kosher Salt & Pepper
For the Dressing:
- ⅓C. Extra Virgin Olive Oil
- 4T. Lime Juice, fresh
- 1T. Cilantro, finely chopped
- 1T. Fresh Garlic, minced
Instructions
- Combine all in a bowl and stir or toss to combine.
- Allow to marry for 30 minutes before serving.
- Variations:
- Swap the cilantro with oregano and add a quarter cup of crumbled feta and 3T toasted pine nuts for a Greek version.
- Swap the cilantro for basil and add a quarter cup of parmesan and 2 minced anchovies for the Italian version.
